Oatmeal is so darn good for you! I could go on forever as to all of its beautiful benefits! However, I don't want to bore you...so let's keep it simple. Here is a quick and easy and ridiculously filling recipe for some Pumpkin Pie Oatmeal. Who says you have to wait until Thanksgiving to get your pumpkin pie fix? Not me! I eat this delicious dose of heaven for breakfast and sometimes even lunch!
PUMPKIN PIE OATMEAL:
Ingredients:
-2 heaping TBS of raw pumpkin (I use Libbys)
-1/2c of Whole Grain Oats (I use quaker or store brand--make sure it's purely just oats, no additives)
-1-2 packets of a 0 calorie sweetener (I use sweet and low OR a spoon full of splenda)
-a few shakes of All Spice (This will bring out the pumpkin pie flavoring--season to taste, too much makes it taste a bit spicy)
-1c of Almond Milk (I use Silk Pure Almond, unsweetend 30calorie almond milk)
How to Make:
-in a large bowl add your oats, almond milk and pumpkin, dont mix yet.
-Microwave for 1 1/2-2minutes.
-Mix your ingredients together while adding your sweetener and allspice
**(make sure its a pretty good sized bowl, this makes quite a bit of oatmeal due to how much liquid we are putting into it. The oats will bloat up and soak it up, similar to what occurs when cooking rice.)
-Sometimes I like to add some fruit frozen or fresh.
Now, after you make this you're going to be thinking "HOLY COW THAT'S A LOT OF OATMEAL!" it will keep you comfortably full and satisfied.
PUMPKIN PUMPKIN PUMPKIN:
Pumpkin is loaded with fiber which keeps you full and will help cleanse your digestive system. There are so many benefits to pumpkin, it's unreal. It's so pure and is just simply good for you, while being delicious. I add pumpkin to just about anything! It's a great alternative while baking, and tastes amazing in shakes! Pumpkins are good for anti aging, and are an antioxidant and anti inflammatory food. Pumpkin is also loaded with Potassium and Zinc. Why is this important you ask? Zinc is great for your immune system, skin AND fertility! While Potassium helps keep your bones good and strong and also helps regulate your fluid and electrolyte balance! (similar to what gatorade is known for, however pumpkin isnt loaded with all of the extra unwanted sugar!)
Finally, one of the most beautiful benefits of pumpkin is that L Tryptophan, this is a lovely chemical compound that triggers the sense of well being that aid depression in a beautiful natural way that you DON'T need a prescription for! Who wouldn't want to eat something that can help you stay happy?
